Mine, at the moment, is CrakShot. It can be used to attack, and it can be used as cover for attacks that run along the ground!
What is your guys' favourite chip?

Flashman. Gets through shields and is useful against one of the most annoying navis in MMBN3, Bubbleman.
And I just like the stylish animation.

I only really remember the first game completely, and part of the second game (I'm doing a let's play of it currently), so I've not gotten the strong chips in the second game yet. But I really did like Fireman V3 though, Good range, powerful, and pierces right through shields! (although not armors, which no chip can in the first game).
Also like Gutsman, incredible range, powerful and cracks panels (even your own in the second game, which can be used tactically). Recently I've gotten the Fullcust *, which is my regular chip, it allows for some insane deletion times. Those are the ones on the top of my head, but I'm sure I missed a few.

Naming multiple ones eh?
Well then, not only is CrakShot my favourite, but there's also Guard, WideSwrd, BusterUP, and GutsMan too :3
Also, FireMan for the first game. Same reasons as yours, but also because Fireman is awesome <3

I never saw the point in guard, I couldn't get the timing right at all in the first game, although I can in the second. It can't guard against all attacks and the shockwave it sends isn't really useful. I like widesword too, even though its range is kind of limited, but still nice if it's elemental and an asterisk chip. Stepsword pretty much improves on widesword, more damage and better range! Although I don't think it has a elemental counterpart or an asterisk version like the widesword does...

While I like Guard myself (at least in the beginning of the games) I find CrsShields to be so much more useful.
I try to ignore the evil little laugh that escapes me every time I use it right, though.
